We present a home-style version of a beverage featured on the seasonal cocktail list. It's a large-volume prepared mix which is packed with the essence of a holiday season, making it ideal for a holiday party. Save the extra citrus syrup to use in morning drinks, puddings, or for additional servings of bikinis.

Bikini

Makes enough for 10 guests

For the Citrus Syrup (yields 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar

Ingredients for the Drink (makes 850ml, serving 10)

400ml premium vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, to finish

Instructions

For the Cordial: Combine all the ingredients inside a saucepan, bring to a light boil, mixing until the sugar dissolves. Next, take off the burner and let it to reach room temperature fully. Transfer into an clean bottle, cap it keeping it chilled, it can be stored for around one month.

For the Premix: Pour the specified liquids in a sizeable container, let it rest for one hour, then pass it through best through a fine cloth, so it's completely strained.

When ready to serve: Add 85ml of your premix into your stirring glass filled with ice, gently stirring lightly for a minute to chill. Pour to a frosted cocktail glass or similar, top with the cranberries and finish using a light spray with the mandarin essence above the glass.
